Greetings and welcome from SE Idaho. That's kind of a catchy handle you've got.

Definitely looks like trout to me - a faded out rainbow. Albino came to mind as soon as I saw it, not as in Albino Trout but as in albino rainbow.

Trout yes, rainbow nah. Its spots are just like the markings on salmon, x-shaped and a forked tail though rounded edges. Few spots below the lateral line , rounded nose. Fought like hell.
