    Default More "Fat Pants" Food...

    I have very little work right now, even though I've sold a lot of work. Have to wait 4-6 weeks for cabinetry to be built & delivered. Soooo, what does the PhoDoughgod do when he's bored? Of course! He heads to his kitchen to cook up a little mischief. I've always wanted to make a strudel, but was somewhat intimidated by stretching the dough. I always thought that only my Mother and Grandmother were given the gift for "dough stretching" to where it was so thin you could see through it. Anyway, I figured I would try it, and the worst case would be that I would be out a little flour and eggs. Much to my surprise it was not too difficult once I got the knack of it, and this is what 3 1/2 cups of flour looks like stretched out on a table cloth on my island. Yes, you can actually see through the dough, it's that thin, yet pretty strong.



    Since that worked I then filled the dough and rolled it up into a log. This is 16" x 22" pan, so it gives you an idea how large the dough was stretched. I actually cut this into three pieces, sealed the ends and put it on parchment paper for baking (apples ooze!).



    I gave one length to a customer today in exchange for a signed contract, wrapped up some for the freezer, and will take the pie pan of pieces to my FF Board of Directors meeting tonight. That bunch of guys will eat anything!



    I'll get the recipe up on my website in the next day or so.

    In a way I'm lucky. I have had an extensive check-up in December, poked, probed, scaned and stuck. Nothing showed up real bad, mostly normal stuff for my age. BP, Sugar, Cholesterol, All a tad high and of course the "Smoker" curse. Most of which can be corrected by diet (and of course quiting smoking). The reason I say I'm lucky is that I go back for more blood work the day before Joe gets here!

    P.S. I have cut down on the cigarettes from 3 packs a day to 10 or less! I do enjoy one with that first cup of coffee in the morning.

    Strudel, is what my wife calls it, and I just hate it ,,,,of course I have to try it first,,, then hate it,,,or is that hate what it does to me.

    joe,
    i left the food business 9 years ago to live a dream of working with wood. i have been a chef in new york, san jose ca. and owned two restaurants in mississippi. i just want to tell you that your food is beautiful. food is more than the ingredients it contains. to be beautiful it must contain the passion and love for food that you obviously have. please continue to post these wonderful yummies as they put a big smile on my face every time.

    As a board member I can attest that the doughguy makes a mean strudel. Everyone was polite but if Joe hadn't brought enough I am sure a fight might have broken out. I was sure the pounds I gained for Christmas were going to start going away. Joe isn't helping. This on the heals of cookies at the EXPO and Ohiotubers fudge. Maybe a new larger size wardrobe would be easier.
