Think about a Sit On Top (SOT) yak. It's a bunch easier to get on and off than it is to get in and out. I have a SOT it's easy for me(210 lbs 62 years) to get on and off in water that's up to 2 ft deep, can't do that with a sit in, I don't have to go to solid ground to get off and wade.
Wilderness Systems makes the sit in Pungo and the SOT Tarpon, both come in 10, 12, 14, and 16 foot boats. The Tarpon (SOT) is an exelent yak for fishing and includes lots of features with fishing in mind. Check them out.
I have a Tarpon 160i and fish in the ocean, on lakes and ponds, and on rivers with fly and spin gear. I load it on top of my car, no trailer to deal with, and I can access water anywhere that I can park. I can also get to fishing places that are not accessable by walking or driving (no roads or private property). My kick boat and 14ft tin motorboat don't get much use anymore.
"jsentell" recomends a website that gives lots of info, click on fishing kayaks they compare all the brands.

Good Luck,
Don
