One way is to use them anywhere you would use ostrich.
The quills, when stripped, make great "Quill Body" flies, too!

I like to use Emu feathers for wooly worms/buggers in lieu of the regular stiff rooster hackle. I also use Emu in lieu of spun hackle on wet flies. Here is a link to a fly I use for crappie with good results. While the picture shows a gray fly I prefer olive. Emu dyes easily.

I strip one side of the feather and use them in wooly buggers as the hackle.
I've used the tips for the wing of adult dragon flies.
I like tying with emu.
You can also wrap a hook with them and clip it to form the case of a cased caddis.
It's just cool stuff!!!!
