Yes. I've doing this for awhile now. Works well keeping the peacock quillsSoft. Been tying my quildigon nymphs and coating them with UV resin without any problems.
They will work fine. Sometimes guys will tie a smaller fly on a larger hook just for the extra hook gap. Have fun with it.

I like to use a split thread for things like CDC collars or small dubbing balls. I will use a dubbing loop for larger amounts of dubbing and larger amounts of material.
You underestimate yourself as a guide. Those are some fantastic trout and what a memory she will have of this occasion. Congratulations!
