My first boat was a 12' jon boat that I cartopped. Weighed around 90 lbs. but wheels and ground sliding it overcomes the weight, of course was in my 20's. I am not a fan of traditional canoes, about 90% of the canoes I have been in seemed to have ended up with me in the water. I like my Nucanoe, but it's not light and I learned while difficult to capsize, very easy to fall out of, but the water was warm.
They make foam pontoons to stabilize canoes, maybe you should check out some of those.

Considering all options. I see some canoes as light as....hmm....what was it....14 pounds? Of course not made for two people I don't think. Been a few days since I researched....not remembering all of it
Think I will just learn to use the Canoe we got. I only got it because the wife wanted to go out in it with me. Don't expect that to happen all that many time....so.....when I go alone I will take some kind of smallish craft....my 8' Pond Hopper, or my 8' ODC Creek inflatable with frame and oars. I have a little 8lb thrust trolling motor on it. Works out beautifully on the 35, 85, 93 ponds I am starting to fish here.
