Sometimes, at first, some of the nicest things in life don't appear to be blessings.
One of my best ever dry fly evenings was on the upper Teton River just west of Driggs. I touched near three dozen fish with a size 18 Rusty Spinner imitation on top - all whitefish.

The thing that always amazes me about whities is that they feel so muscular - they must have muscles in places that trout don't even have. And they do know how to use them. I like catching them, just don't like touching them(either, Ron).
I have to add, they make awesome fish cakes when winter caught as well.
When we all first moved to Montana 1973 I think, we were given some smoked whitefish...yes, the local whitefish. I was very nice. I know some who just fry them up as if they were trout. I have not tried that. We do need to remember that some of the fish we once thought of as "trash fish" are now VERY popular as game fish, especially bonefish which were once used mostly for bait for bill fish.
I have eaten fried whitefish more times than I can remember. The flesh of the fish is white and mild in flavor. The fish should be scaled soon after catching or they will become kind of hard to remove. Then clean the fish as you would a trout, douse in seasoned flour and fry. The skin is eatable.
Some people think the whitefish is too bony but their bone structure is the same as that of a trout to which they are related. Perhaps those who got a bony white actual tried to eat a Northern Pike Minnow which bares a resemblance to the Whitefish. My neighbor loves them and swears they taste just like a "whitey" that she used to eat down in Louisiana. In addition I think the flesh does not have quite as good flavor if the fish is harvested during the spawn which occurs in November & December.
