What's In Your Taco ?
I know I've had fish tacos somewhere but it's been a long
time but now all I can think of is a half dozen soft tacos of fresh caught halibut.
Maybe it was in Ensenada in '72...they had a lot
of great eats there back then...turtle too...the
most memorable soft tacos were from a street cart
in Tijuana...consisting of a steamed corn tort, a good
bunch of goat meat 'barbacoa' style and then we got to
put on the toppings of our choice from the cart...cilantro
was a first for me back then and I've loved it ever since.
Worked at an avacado ranch and never grew
tired of the free fruit after a whole summer of
picking and hauling.
Ok, now I've spilled...so like the title says...
"What's In Your Taco"? Be great if JC started it off with what he puts in his tacos, yes?

My first fish taco was on the banks of Lake Gararro in Mexico some 34 years ago. We were camping and met 3 commercial largemouth bass fishermen. They had a fire going and were using a wire screne to grill bass fillets, corn tortillas, and chillie peppers. We were invited to lunch and brought along some cold beer.
When the fish was cooked, you scooped it up with the tortilla and sprinkled on some chillie peppers. Broke da Mouth.
I've had many an excelent fish taco since then, but I'll always remember that lunch.
