I can use 'em for salmon or trout ... I can fish then dry or wet, ... I can hack 'em up if I need a slightly different fly and they can imitate many many critters that one finds in and on the water.

There is a story behind this question but if I told it the names would have to be changed to protect the stupid
Zulu, Irresistible, Stimulator, Royal Coachman, Baggy Shrimp, Black Gnat. Answer: They have caught more fish than all the rest of the trout flies I have tied and tried.
If I was fishing for trout, I would tye soft hackles in olive, orange, hares eye, and tan. They can be sunken, floated, or be twitched under the surface. They have been the most effective flies for me.
Depending on the time of year for trout, a Baillie's (Stewart's) Black Spider, Greenwell's Spider, Pritt's Water Cricket, Pheasant Tail and Furnace, Partridge and Orange, and a Snipe and Purple.
These flies cover a wide range of insects and, as stated by Ken Y, they can be fished as a dry, an emerger, a dun or a drowned dun, plus a few terrestrials are mimicked by these flies as well.
They are quick ties (3 to 4 minutes per fly), materials are next to nothing, and they are fun to fish. These flies have been around for hundreds of years and are still popular because they work extremely well.
