Seems like I saw a post recently about a way to tie foam on so it doesn't try to spin - was that here? Anybody remember it?
I think it was included in one of ScottP's step by steps but I don't remember which one.
What I do is cut a "V" shape on the end of the foam. Easy to tie that down and hold foam.

Also, consider adding a base layer of thread before trying to attach the foam. You can even put a dab of super glue on the thread before laying on the foam. This should solve your issues.

If I am wrapping foam - I always try to make a point on the end an v- notch the pieces I am tying in . I hate when it bunches
