Contact Flats Dude (see FAOL archives) at http://www.flyfishermaninc.com/ thats his area. Also check the bulletin board archives for Mosquito Lagoon reports. I can't remember the handle of the guide who posts thembut that is just South of Canaveral.
My son and I were down there a few years back to paddle and fish the No Motor Zone behind Cape Canaveral. It was a blast and we caught nice trout and reds. The area is huge so you need to do some research, particularly about launch sites. You can access it from both Merritt Island and Titusville. Contact these two tackle shops for further assistance. Both are run by great people.

Try Orlando Outfitters, talk to Chris Barco, he will have the low down on where to go and what to use. The Fly Fisherman in Titusville has gone down hill but the one in Orlando seems to have some good folks that are willing to help.
The No Motor Zone is a large area and you need to have a canoe or kayak to fish it, but there are plenty of places that you can wade and catch fish without a boat in the area.
