I had a lady friend who once told me of a stuffing she used on fish. It was green peppers, onions, bread or cracker crumbs ( your choice ), a few mushrooms and tomato paste. Can't remember how much of each item to add. It did turn out better than I thought it would. I used it on a couple large salmon several years ago.

Bake the fish whole with regular stuffing you would make for chicken or turkey. "Sew" the fish back together with dental floss (unflavored) and bake the whole thing in almost covered in milk. Yes, milk, at 300 degrees for two hours. The bones will mostly dissolve and the trout will be perfectly poached. It does need to be covered so you may have to use an aluminum turkey pan and foil to cover it. It is worth the effort.

Chipotle Mango Pineapple Salsa
1 small fresh pineapple, trimmed, diced
1 sweet red pepper, cored, seeded and chopped
1 Mango, peeled, pitted and diced into like 3/8? cubes
3/4 cup chopped red onion
2 tablespoons chopped fresh cilantro
juice from 1 fresh lime
1 Tbsp. mashed canned chipotle chile, in adobo sauce
1 Tbsp. adobo sauce from can of chipotle chiles
Combine pineapple, mango, red pepper, cilatro, lime juice, chipotle and adobo sauce in large bowl. For best results, refrigerate, covered, for a few hours or overnight.
Note: Pineapple Dice First, slice off the crown. Then rotate and cut a thin slice off the bottom. Stand upright. Cut along the curve, about 1/4 inch in from "eyes". Cut four side pieces, leaving a core about 1 inch square. Cut each side into 1/4inch strips; turn and cut across into small dice.

I'm not much of a cook but baking a trout makes me hurt when I remember apple wood smoked trout. There is a lady in north GA that sell that to restaurants, excellent stuff.
All keeper Steelhead the biggest went at nine lbs. We (Ira and I) also caught two nice native fish over the weekend which were happily released unharmed. Making a grand total of five over two days. Sorry not redside trout these fish went to the Ocean and came back. Cheers Jake
