Chartreuse over white, without question. Of course, I don't really know how other colors fish -- because that's about all I've got.
This year, I think I might use bead chain eyes mostly. They won't sink as well, but maybe I won't get hit so much. I think the bead chain eyes should be enough to get them to invert.
I've got three "go to" colors. I list them in my order of preference.
Tan, off-white, or light gray over white
Chartreuse over white
Brown over orange
I use very little flash in my Clousers. 8T :D

Depends on how I'm fishing them.
If I'm working them fast, by far my best colors are chartruese over white and olive over white.
I also use them fished slow with soft rod tips lifts like you'd fish a plastic worm. For that, I like olive or brown.

Another vote for chartreuse over white. I also use all black, burple (black over purple), olive over yellow and all white. I tie them very sparsely. The brown and orange combo 8Thumbs mentioned sounds like a good one for a crayfish imitation.... hmmmm
I haven't fished ha;f and halfs before, but plan on tying some up this year to try out. They look very fishy to me. I'm also going to try some smaller "clousers" with all marabou and beadchain eyes for crappie.

I struggle with tying good Clousers. They always end up looking awkward. Could anyone post a picture or two if you have one handy? (And yes, I know that it is in the fly archives and numerous magazines, but every extra picture helps. :D )

Chartreuse over white again. 2" to 3" long which are small enough for bluegill but large enough for bass. I tie the small ones with bead chain. I'm thinking about the crawish pattern though.

White over white, white/red, white/pink (works great for stripers/hybrids) white/red and white/chart. Bead chain eyes for shallower water/smaller fish. Great pattern. If I had to pick one color it would be white/chart. Good luck and think flashy.
