No experience with the waterproof cameras, but take a look at the Pentax Optio series. A lot of people like them.
Also the olympus stylus is waterproof.

I've got the pentax optio w30....and love it.....
I just bought the wife an Olympus waterproof camera. She doesn't tie flies or she would have got the Pentax because the biggest drawback to the Olympus is its sad macro capabilities.
I have the lowly Pentax WR 33 and love it! It's small enough to wear on a lanyard, focuses down to 1 CM and has a viewfinder that is well used in bright light.
I have the Pentax Optio W20 which is waterproof and you can take pictures under water if needed. I love it and recommend it!
I, also, have a Pentax Optio. It's the W30- waterproof and after owning 5 digitals, the Pentax, (for getting wet, or shooting underwater shots), is the best I have. My Olympus, though, I prefer for all other types of picture taking I like to do.
The Optio is also fine for general picture taking and does a very good job, doing so. It's just a couple of my Olympus have more features for "fine tuning" some photography, that the Pentax doesn't.
You can also do short Video, with the W30.......(like a nice 90 seconds of your fishing partner falling in?) and one feature, being an old ****, I love......is the "Shake Reduction" feature for both stills and video. Less, "blur" and less need for a tripod, to get good steady, shots. The camera is waterproof to 10 feet down, which is nice. if it's dropped. (or, if you have REALLLYYYY long arms?!)

I have the Pentax Optio W10, which I got just before the Michigan Fish-In 2006. I took a beautiful underwater shot of Aaron Weaver's nice rainbow, but my old computer crashed & I lost the picture. It was posted here...hopefully someone can post it to show the results. I highly recommend the Optio series of waterproofs & am sure the W30 is the newest & best.

The early one was great and the current one is far better! While I mostly use it for fishing so I don't have to care if it gets wet, I've used it for underwater as well as low-light (museums and night shots) with very good results.
Since the lens is entirely inside the camera's body, you can press it up against a window/case to get rock-solid long exposure shots (museums, night shots, etc).
I also use its macro mode to take pics of bugs I've pulled off the water so I can study them later to figure out what flies might work better or to use as models for fly tying.

Love the camera, easy to use.
As another option you might try a waterproof camera case that allows you to take pics without removing the camera. Try searching on AQUAPAC.
How well does the Pentax Optio shoot in the Macro setting? That's very important to me because I like to shoot the invertebrates I tie.

Trust me when I tell you I have absolutely no clue when it comes to photography and I didn't spend more than a second shooting these pixs. I just switched to the macro setting; focused and clicked.
That's certainly good enough for my needs. I'm keeping a photo album of bugs.
