I would like to piggy back on Smernsky's request. There are several of us out here in the Rockies who are interested in a Labrador trip this summer. I had hoped to pick up info at the Denver International Sportsmen's Expo but there wasn't a single outfitter from Labrador represented; guess they only do the Eastern shows.
Been there and loved it. There are a number of excellent outfitters running camps in Labrador.

There are many others but I don't have personal experience with them, perhaps others can offer advice.
For trophy Brookies Labrador is the best place in the world.

My Labrador doesn't like being cast on a 12-weight... but you get some good runs from him! Prefer whippets, they don't spook the fish on splashdown!

I fished in Quebec. We chartered a plane to a remote lake where we camped and eventually moved into an old trappers cabin we found on an island. We brought our own boat and motor, but there are many operations that have boats at remote locations and rent them to you. I could get you the name of plane company if you want. The brook trout fishing wasn't that good and we mainly focused on lakers that were shallow at the time and pike. It was fun, and if I did it again I'd pick more of a river system than a chain of lakes and I'd focus on brook trout but I'd still consider going back to Quebec instead of Labrador. You catch more fish when you stay at a lodge but it's fun to explore on your own and it's a lot cheaper.
It's not everyday that someone gets to name a lake, but a friend of mine did just that several years ago. Len Rich discovered a lake chock full of trophy brook trout in Labrador's Mealy Mountains. It had no name but the scenery and fishing was just awesome, so Len named it Awesome Lake and built a lodge at the site. I have fished all over Newfoundland and Labrador and whenever I get the chance, I drop in on Len for some of the best trout fishing and hospitality I have ever encountered. I am not affiliated in any way with the lodge or with Labrador Angling Adventures.
I can personally account for Three Rivers Lodge. (see dryflie's respose for the web site) After many years of dreaming, I finally went last August. I didn't catch big numbers of brook trout, but the ones I manage to land were huge including one that calculated (their policy is strict catch and release, FFO, barbless hooks) to 10.7 lbs! As fantastic as the fishing was, it was the country and the people, especially the guides, that made it a most memorable trip. As soon as I got home, I sent in a deposit for 2006.

In northern Quebec, not far from Labrador is the Whale river system.
In the next week or so, I'll be posting a report (in the Man in Canada section) on my fishing at Camp Champdore at the headwaters of the Whale.
Excellent lake trout, brookies, landlocked salmon, pike and whitefish in still and moving waters.

Labrabor is neat. If you can't get that far, the Broadback river in northern Quebec (well, only 3 hours from me) is a nice spot too.
If I'm not mistaken, the world record brookie was taken there (albiet on a Rapala).

Labrador offers fantastic brook trout fishing.Depending on where you go, you may also get into some great landlocked salmon, pike or char fishing too. I fished Labrador last summer and Northern Quebec (Champdore) before that. One thing to consider is whether you prefer river or lake fishing. Some camps like Three Rivers offer river fishing while others (Igloo Lake Lodge)offer mostly lake fishing. It can all be on dry flies depending on when you go. Champdore has superb brook trout fishing but its better in August than in July. Other camps are the opposite. When you can go may influence where you go. Be sure to ask about timing. Don't go expecting to cast dry flies and find out you will be trolling streamers. Know what you are getting into and you will find the fishing can be almost beyond expectations. Last year, we went early and found big brookies chasing the suckers up small creeks during their spawning run. It was like rainbow fishing in Alaska.
