Cranberry bread
I brought this into work today and thought I should share it with the FAOL'ers.
This is more like a coffee cake, and is a family favorite. Stock up on the cranberries after Thanksgiving is over. I buy lots of them and fill the freezer while I can. I hope you like it as much as we do.
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 cup sugar
1 tsp salt
Mix together in a bowl and cut in 1/4 cup butter until the mixture resembles small crumbs. Then add:
3/4 cup orange juice
1 egg
Mix until just moistened then add:
2 cups chopped fresh cranberries and 1 cup chopped pecans
Fold in and pour into greased and sugared 9" loaf pan. Sprinkle sugar on top and bake at 350 degrees for 1 hour and 10min. Completely cool before taking out of the pan.

Definitely have to try this one out. My family loves Cranberry bread and this recepie is very similar to one I use from Cooks Illustrated. For those with a Costco nearby I found 3 lb. bags of Cranberries for less than $4.00 on a recent visit.

(reminds me of some muffins I used to buy at a bakery that closed)

Made this Tuesday night last week and it went over gangbusters at my house. Plus took some to work with me on Wednesday and got very favorable reviews.
