Ive been spinning deer hair for some muddler style heads. However i find that the hair does not spread evenly on the hook, any tips on getting a more even spread?

Bad hair day, huh?
Everyone has their own approach with spun/stacked hair. You will need to experiment some to find what works best for you.
I would suggest trying larger chunks of hair and using sufficient thread pressure to spin the hair and secure it to the shank.
Use something to pack the hair. It can help alleviate those thin areas.
Learn how to stack hair, rather than just spinning. Not only can you create a dense head, but you can also create a mottled effect by using more than one color.

Billy Munn has put out a DVD on tying hairbugs. While he doesn't tie any muddlers on it, it will teach you how to spin and stack, and to cut and trim deer hair. It is a great DVD!
I've been sitting across from and next to Billy at FFF Conclaves for over twenty years, and he's been tying at FFF Conclaves for a lot longer than that.. They don't get any better. (Ed Jaworowski's endorsement of the DVD stated "Billy Munn is the standard by which all the others are guaged." Plus Billy's a great gentleman.
The DVD was produced by Golden Hour Pictures 972-523-1109. I presume that those folks can get you DVD.

I started stacking and spinning deer hair recently. I am with you on the uneven spinning. You can stack a little extra hair in to even things up a bit.
What got me on the right track was Chris Helm's Spinning Deer Hair DVD. He show you how to spin, stack, trim etc.
