The recipe looks great! unfortunately my wife doesn't like escarole/chard. Strangely, she likes spinach. Would that work?? If not, any other ideas??

Hi. I think that spinach would boil down to about nothing but it probably wouldn't hurt anything. Escarole cooked this way is very mild.. let it simmer for a good while. Swiss chard is more mild than usual this way, too, if you let the soup simmer before eating. If you do use spinach put it in at the last five minutes or so of cooking rather than at the beginning.
