Here is one of the best jerky recipes you'll ever come across, and it's "tried and true."

5 oz - Soy Sauce
5 oz - Worchestire
5 tbls (Little bit over a 1/4 cup) Hickory Liquid Smoke
2 tsp Tabasco
1 tsp Garlic Salt
1 tsp Onion Salt
Soak meat strips for "at least" 2 hrs, over night is better.
Put meat in dehydrator - cook about 6 hours.

I double or triple the Tabasco, and I even add "crushed red pepper" at times, but I like the jerky really hot.
I use a dehydrator, but I assume you can put in the oven with the door cracked, but don't take my word on that. I would think that might be a bit expensive, running a 220 oven long enough to dry the meat. You can get a pretty good dehydrator at one of the "big box" stores for about $25. Once you try this recipe you'll have 5 dehydrator's going all the time. LOL!
I mainly use this with venison, but "plain old beef" works just as good, and I "always" soak over night. If you get to making this recipe you'll be tempted to re-use the marinade. I tried it and that doesn't work, the jerky just doesn't have the flavor, and you end up wasting a lot of time and expense.
But stuff as much meat as you possibly can into the fresh marinade and it will come out fine. Cut the meat in thin slices.
My nephew is a graduate of the Pittsburgh Culinary Institute, and has some great marinades for beef, venison, wild fowl and fish. While he has a dehydrator available to him, he chooses to use the gas oven to process his jerky. As his favorite uncle, I get to sample lots of his great jerky, and I have to say that each batch is better than the last one.
Not sure what the time factor is using the oven, but it is very doable if you don't have a dehydrator.

If you use an oven electric or gas, it should be 150degrees for however long it takes, 7-12 hrs.
That said I have a propane smoker that I love...
No oven or dehydrator needed, just a box fan. I have not tried it but have see the show on TV that Alton does on this.

Good sounding recipe...I'll try it, although mine will be done in the oven. I bought a jerky rack at Cabelas where you hang the meat strips off skewers.
I will follow this thread for other hints & recipes. Good thread for a great stream & lake side munchie!

Made it almost commercially in Montana in an electric kitchen oven. yum,,,
ah yes, my recipe for the best jerky in the world...go north to Dublin, MI to a little place called The General Store (You can find it here ), enter the doors, walk back to the meat counter and try to select just two of the multitude versions of jerky which they carry. Ah...I think I need to leave now; I can just make it back before services start here.
